A pancake has to come off the griddle in one lift instead of folding over on itself. The Pancake Spatula is wider for this purpose.

It is carved to shape by hand, with the front edge taken down thin so it slides under without tearing anything. That thin edge also means it is made for lifting and turning rather than scraping. Anything stuck to the pan needs a different tool.
